It's very difficult to pick only one recipe! But I have chosen one from a Canadian book called "Food That Really Schmecks", a Mennonite cookbook by Edna Staebler. It's a good recipe for a Christmas sweet that you don't have to cook. (And I would recommend any of Edna's 'schmecks' cookbooks to those of you who like tasty food that is simple to prepare, and old-fashioned.)
SNOW BALLS
1 cup peanut butter
1 tablespoon butter
1 cup icing sugar
1 cup rice crispies
1/2 cup nuts (optional)
Mix well in a bowl and with buttered fingers form into small balls.
ICING
1/2 cup icing sugar
1 tablespoon melted butter
Warm water to make a thin icing
Grated coconut
Blend sugar, butter and water. Roll balls in icing, then in coconut.
